Ingredients

  • 200g (1 small cup) millet (dry and raw)
  • 500 ml (2 1/2 small cups) water
  • 40 ml sugar-free fruit concentrate
  • 100 g raisins
  • 100 g shredded coconut
  • pinch of salt

Directions

Mix raisins with hand blender in 1/2 cup water. Rinse millet in cold water, bring it to boil with 2 cups of water, fruit concentrate, pureed raisins and salt. Simmer on low for 20-30 minutes until water absorbs.

Dry roast shredded coconut in the meantime.

Add half of roasted coconut to the cooked millet, mix well and leave to cool to 40º C or so. Form balls with wet hands. Coat balls in other half of roasted coconut.

Leave balls to cool down and store in cool place.

If you prefer sweater balls, use more fruit concentrate or more raisins.

If the mixture is too watery, add shredded coconut.

Mofifications

Dried apricots or dried plumbs may be used instead of raisins. Ground roasted nuts or sesame seeds may be used for coating instead of shredded coconut.

Children

Leave out coconut if you want to serve the balls to kids aged below 1 year.
