Ingredients
- 3 cups of spelt flour
- 1 cup of corn flour
- 1 cup of sourdough
- pinch of salt
- raisins, dried apricots
- chopped almonds
- sunflower seeds
- water or plant-based milk
- rice syrup
- shredded coconut
- lemon peel
Directions
From flour, sourdough, syrup, salt, water or milk we make a dough. Not too stiff but not liquid. Mix almonds, seeds, coconut, lemon peel and dried fruit (can be soaked in rum or mirin). Spread the lamb ceramic form with oil (for example sunflower) and sprinkle flour. To the place where eyes are situated add raisins. Fill the form with dough and let it rise for 4-8 hours in a warm place. Then bake for about 50 minutes (depending on the form size) at 200°C.
Practical info
If you give more dried fruit, you don’t have to add lots of syrup, the fruit will make the sweet taste.
